After seeing Margaret from The Plant Philosophy post a photo of this Vegan Hemp Seed Pesto Pasta Salad on Instagram, I had to try it. It’s so hot here in Texas–I’m all about salads of all kinds lately. The recipe didn’t take long to make, and it came out delicious! I made it with gluten free brown rice shells and used spinach (I’m not a fan of arugula) and some Nutty Parm from The How Not to Die Cookbook that I already had ready.
Next on my list is this Vegan Buffalo Chickpea Salad–doesn’t it look delicious?
