I’m not a raw vegan, but I still like eating some raw meals like smoothies and salads, so a couple of Kate Flower’s recipes caught my eye.
The first recipe I tried was her Carrot Cake Smoothie Bowl. The recipe ended up being pretty involved since I decided to make cashew butter myself (after seeing it was $18 at the store!), but it was quite tasty (especially the cream cheese frosting) and was a nice variation from my usual berry smoothies.
The smoothie was pretty small though, so I think next time I would add another banana. I also added an extra Tbps of cashew butter to the frosting because mine wasn’t thick enough as is, and I had trouble finding carrot juice (and don’t have a juicer), but I did finally find and use some carrot/ginger/turmeric juice that worked out fine.
I also tried Kate’s Favorite Salad and found it to be surprisingly filling for a raw salad recipe. I liked how easy the dressing was to make and have made it a few times since.
