I’m on a roll lately with making recipes from The Plant Philosophy! This Oil-Free Thai Salad with peanut dressing is so good I’ve already made it 5 times in the last few weeks and highly recommend trying it!
The dressing is delicious and easy to make, and I love the spinach salad with lots of veggies topped with cilantro and mint. It’s so fresh and perfect for hot summer days! I usually add bell peppers for even more color and sometimes Gardein Chick’n Scallopini as well.
