Welcome to another What I Ate Wednesday! I like posting these to share meal ideas/recipes I’ve tried. To get an idea of what I eat in a day as a vegan, keep reading! I also avoid gluten and oil, so all of these meals are gluten and oil free.
For lunch I had a huge salad with green and red leaf lettuce, quinoa taco meat from Minimalist Baker, beans, pico, avocado, and nooch. The taco meat was good but took a while to make, but I had leftovers for a few days so it was worth it. Also, I omitted the oil from the recipe, but it still came out great. Yay for hearty, healthy salads!
For dinner I made gluten-free brown rice pasta spirals with a cauliflower and white bean-based Alfredo sauce. It didn’t taste exactly like traditional Alfredo, but it was still really good and full of fiber and nutrients. If you’re interested in the recipe, let me know in the comments. I also sauteed some onions, mushrooms, red peppers, and sun dried tomatoes in water and served everything over baby spinach. And of course I had to top it all with crushed red pepper and vegan parm!
As per usual, I had popcorn with nooch as a snack in the evening and also some dried mango.
*I also take a b12 supplement since as a vegan I don’t get it from food.
