What I Ate Wednesday (Vegan, Gluten & Oil Free)

Hey everyone–it’s time for another What I Ate Wednesday! I’m actually in Disney World right now, so I scheduled thisĀ post ahead of time. Also stay tuned because I’ll probably do a What I Ate at Disney post when I get back.

BREAKFAST

For breakfast I made Caitlin Shoemaker’s Baked Golden Mylk Donuts with sweet potato frosting with a new donut tray I got recently at Target. I liked how simple the ingredients were with no added sugar or oil–it was basically like eating my usual breakfast of oatmeal and banana but in donut form with unique spices. Also I’m always on the lookout for new recipes with turmeric because it’s anti-inflammatory and may prevent cancer. I would make these again but would use less pepper next time–they were a little spicy but otherwise good. (I like spicy but not so much in donuts, lol.)

LUNCH

For lunch I made one of my faves–a burrito bowl with black beans, jasmine rice, steamed broccoli, peppers, tomatoes, lettuce, guacamole, and corn salsa. I also made oil-free chips by broiling a couple of corn tortillas for a few minutes. If you make them, watch them carefully because they go from not done to burnt very quickly.

DINNER

For dinner I made my PB&J Smoothie Bowl but added kale instead of spinach and soy milk instead of coconut water and topped it with chia seeds, barberries, cocoa nibs, and fresh peanut butter. I love smoothie bowls because they’re a great way to eat lots of fruit and veggies but taste like dessert!

SNACKS

Can you guess what snack I had? Yep, popcorn again. šŸ™‚ I useĀ this popperĀ to make it without oil.

*I also take a b12 supplement since as a vegan I don’t get it from food.
