Preheat oven to 400 degrees F/204 degrees C.
Put the soy curls in a bowl, cover with water, and allow to soak for at least 10 minutes (or as long as the instructions say.)
Drain the soy curls and spread them out on a silicone or parchment lined baking sheet. Sprinkle generously with salt, pepper, garlic, onion, paprika, or any taco/fajita spices.
Bake at 400 degrees for 20 minutes, flip the soy curls, and bake for another 10 minutes or until crispy.
Serve on warm corn tortillas with guacamole, pico, or toppings of choice.
